Miso can be a little stubborn to dissolve into your sauces, so don’t just add it to thin sauces directly into the pot or pan, as miso can stay lumpy without whisking. Because of this, the colour of our miso paste varies from batch to batch and the flavour may be slightly different too, to a small degree, and that’s the beauty of eating food that is live and natural; each batch is unique. This recipe delivers depth, firmness and freshness all at the same time, meaning that the days of sub-par vegan dumplings are over! Miso butter is also brilliant on other roast vegetables this season, so you can make a bit more than below, so you have extra for your potatoes, carrots, and even on your Christmas canapés. Red or dark miso ranges in color from light brown to almost black and is fermented for longer for a stronger, funkier, and saltier flavor.

Roughly, we suggest a tablespoon of white miso for lighter cheese dishes per person/serving, or half a tablespoon of red miso per person if you are adding stronger tasting cheeses like parmesan or blue cheese.
