Made of mung beans, these noodles have a gelatinous thread-like structure and are usually folded into bundles for retail distribution. I loooove this Microplane extra coarse grater (pic below) which worked perfectly and yielded the perfect size noodle. You need only two ingredients to make homemade glass noodles ( mung bean jelly noodles), but you will need a couple of tools.

There are also sweet potato thread noodles (红(hóng)薯(shǔ)粉(fěn)), konjak thread noodles(魔(mó)芋(yù)粉(fěn)), pea thread noodles (豌(wān)豆(dòu)粉(fěn)丝(sī)) and etc.The mung bean noodles soak up the fragrance and flavor from the pork belly and the aromatic elements balance with the sweet and crunchy veggies to make this dish super tasty! Tossed in a sesame soy dressing, it is the perfect side to a summer meal, or as a light healthy lunch!
