If you take a tray of beautiful freshly harvested mushrooms to the best restaurants, farmers markets and food outlets in your local area, you’re likely to see them snapped up pretty fast. So at this point please make sure not to spray the pins directly. Please mist into the MonoTub so the mist falls down over the pin heads. The best restaurants in your area: good chefs instantly recognise the high quality and taste of fresh mushrooms & are happy to pay for them – especially if they can advertise you as a local supplier on their menu. Theoretically, you can grow just about anything in a Martha tent, because you can control the humidity and temperature to whichever mushroom you want to grow.

One popular set-up is called a Martha [ii] (apparently it was first made using a product sold by Martha Stewart). It involves a wire frame with four or more shelves covered by a transparent plastic sheath with a door-flap. The shelves allow you to place plenty of cakes or bags inside simultaneously, while the plastic sheath retains both warmth and humidity. There’s just a few complications. It’s a very easy structure to assemble and fits into a closet or small corner. You’ll want a corner out of direct lighting. Most fungi prefer a bit of shade, and direct light can heat the structure well past fungal comfort temperatures. Cook your mushrooms, not your mycelia.
